Sweet Potato Omlette

  • 1 large sweet potato, peeled and sliced into very thin slices

Season with salt and pepper and fry in olive oil on medium heat until sweet potatoes are tender and browned on both sides.  Remove from pan.

To same pan, add:

  • 1 onion, thinly sliced

Cook over medium heat until soft and translucent.

In a large bowl, beat:

  • 6 eggs

Gently stir in cooked sweet potato and onion.  Pour back into same frying pan and cook for 2-3 minutes per side. 

This is plain, or you can serve it with avocado slices and salsa.  Refrigerate left-overs to eat hot or cold.
